Okra gumbo is an old family favorite, but probably controversial in terms of whether it's a true gumbo. But that's a whole other can of worms we won't open today.
This version is vegan and pairs perfectly with cornbread.
Okra Gumbo
1 lb. fresh or frozen okra, sliced
1/2 white onion, diced
1 clove garlic, diced
2 (14 oz.) cans of finely diced tomatoes
32 oz vegetable broth
12 oz can of vegetable juice
1 tablespoon Tony's Creole Seasoning
1 teaspoon of cayenne pepper (optional)
3 tablespoons of vegetable oil, divided
Brown onion and garlic in 1 tablespoon of oil. Add 2 additional tablespoons of oil and the sliced okra. Sweat the okra 5-7 minutes to cook off the slime.
Add vegetable broth, juice and spices. Simmer for 45 minutes to an hour.
